Frito Taco Casserole – A Cheesy, Crunchy Tex-Mex Favorite

Ingredients

• 1 lb (450g) ground beef
• 1 tbsp olive oil
• 1 small onion, diced
• 1 clove garlic, minced
• 1 packet taco seasoning (or homemade: 1 tsp cumin, ½ tsp paprika, ½ tsp chili powder, ¼ tsp garlic powder, salt & pepper)
• ½ cup water
• 1 can (15 oz) refried beans (or black beans, drained)
• 1 can (15 oz) diced tomatoes with green chilies (optional for heat)
• 1 cup sour cream (or Greek yogurt)
• 2 cups shredded cheddar cheese (divided)
• 1 large bag Fritos corn chips (about 9–10 oz)
• Optional toppings: sliced olives, green onions, jalapeños, lettuce, salsa


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, heat olive oil. Add onion and sauté 4–5 minutes until soft.
  3. Add garlic and ground beef. Cook 6–8 minutes, breaking it apart, until browned. Drain excess fat if needed.
  4. Stir in taco seasoning and water. Simmer 5 minutes until thickened.
  5. In a 9×13-inch baking dish, spread refried beans on the bottom.
  6. Layer with half the crushed Fritos, followed by seasoned beef, diced tomatoes, sour cream, and 1 cup cheese.
  7. Top with remaining Fritos and remaining cheese.
  8. Bake 20–25 minutes, until bubbly and golden on top.
  9. Let cool 5 minutes. Top with fresh lettuce, green onions, olives, or jalapeños before serving.

💡 No-stir shortcut: Use canned chili instead of beef + seasoning for even faster prep!
