Ingredients
• 1 lb (450g) ground beef
• 1 tbsp olive oil
• 1 small onion, diced
• 1 clove garlic, minced
• 1 packet taco seasoning (or homemade: 1 tsp cumin, ½ tsp paprika, ½ tsp chili powder, ¼ tsp garlic powder, salt & pepper)
• ½ cup water
• 1 can (15 oz) refried beans (or black beans, drained)
• 1 can (15 oz) diced tomatoes with green chilies (optional for heat)
• 1 cup sour cream (or Greek yogurt)
• 2 cups shredded cheddar cheese (divided)
• 1 large bag Fritos corn chips (about 9–10 oz)
• Optional toppings: sliced olives, green onions, jalapeños, lettuce, salsa
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, heat olive oil. Add onion and sauté 4–5 minutes until soft.
- Add garlic and ground beef. Cook 6–8 minutes, breaking it apart, until browned. Drain excess fat if needed.
- Stir in taco seasoning and water. Simmer 5 minutes until thickened.
- In a 9×13-inch baking dish, spread refried beans on the bottom.
- Layer with half the crushed Fritos, followed by seasoned beef, diced tomatoes, sour cream, and 1 cup cheese.
- Top with remaining Fritos and remaining cheese.
- Bake 20–25 minutes, until bubbly and golden on top.
- Let cool 5 minutes. Top with fresh lettuce, green onions, olives, or jalapeños before serving.
