Ingredients
• 1 lb (450g) boneless chicken breast or thighs, cut into bite-sized pieces
• Salt & black pepper to taste
• 2 tbsp olive oil (divided)
• 3 tbsp butter (or ghee)
• 4 cloves garlic, minced
• ½ cup dry white wine (optional, or sub with chicken broth)
• ½ cup heavy cream or full-fat coconut milk
• ½ cup grated Parmesan cheese (plus extra for serving)
• 1 tsp Italian seasoning
• Fresh parsley, chopped (for garnish)
For the pasta:
• 8 oz fettuccine or penne (or gluten-free pasta)
• 1 tbsp butter or olive oil (to toss)
• Salt (for water)
Instructions
- Cook pasta according to package directions in salted water. Drain and toss with 1 tbsp butter or oil. Set aside.
- Season chicken bites with salt and pepper.
- In a large skillet over medium-high heat, warm 1 tbsp olive oil. Sear chicken in batches until golden and cooked through. Remove and set aside.
- Reduce heat to medium. Add remaining 1 tbsp olive oil and butter. Sauté garlic 30 seconds until fragrant (don’t burn!).
- Pour in white wine (if using) and simmer 1–2 minutes to deglaze the pan.
- Stir in heavy cream, Parmesan, Italian seasoning, salt, and pepper. Simmer 2–3 minutes until sauce thickens slightly.
- Return chicken to the pan. Toss gently to coat and heat through (1–2 minutes).
- Serve immediately over creamy Parmesan pasta. Garnish with fresh parsley and extra Parmesan.
