Ingredients
• 2 (6-oz) center-cut salmon fillets, skin removed
• Sea salt & black pepper
Garlic Knot Topping:
• 1 tbsp olive oil
• 2 garlic cloves, finely minced
• 1 tbsp fresh parsley, chopped
• 1 tsp fresh dill or chives, chopped
• ½ tsp lemon zest
• 1 tbsp grated Parmesan or nutritional yeast (dairy-free option)
• Optional: pinch of red pepper flakes for gentle heat
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- Pat salmon dry; season lightly with salt and pepper. Place fillets on sheet.
- In a small bowl, mix olive oil, garlic, parsley, dill, lemon zest, Parmesan (or nutritional yeast), and optional red pepper flakes.
- Make the “knots”: Spoon mixture in 4–5 thin ropes over each fillet, spacing them like laces. Gently twist/tuck ends to resemble loose knots (no baking dough—just a flavorful, garlicky crust!).
- Bake 12–15 min, until salmon flakes easily and topping is golden and fragrant.
- Finish with a squeeze of fresh lemon juice and extra herbs. Serve with roasted asparagus or cauliflower mash.
