Garlic Parmesan Beef Tortellini Bake – A Cheesy, Comforting Weeknight Dinner

Ingredients

• 8 oz refrigerated or frozen cheese tortellini
• 1 tbsp olive oil
• 1 small onion, diced
• 2 cloves garlic, minced
• 1 lb (450g) ground beef (or plant-based crumbles)
• ½ tsp dried oregano
• ½ tsp smoked paprika
• Salt & black pepper to taste
• 1 cup marinara sauce or crushed tomatoes
• ½ cup heavy cream or full-fat coconut milk
• ½ cup grated Parmesan cheese (plus extra for topping)
• 1 cup shredded mozzarella cheese (divided)
• Fresh parsley, chopped (for garnish)


Instructions

  1. Cook tortellini according to package directions. Drain and set aside.
  2. In a large skillet over medium heat, warm olive oil. Sauté onion 4–5 minutes until soft. Add garlic and cook 30 seconds more.
  3. Add ground beef and cook until browned. Drain excess fat if needed.
  4. Stir in oregano, smoked paprika, salt, and pepper.
  5. Pour in marinara sauce and simmer 3–4 minutes.
  6. Reduce heat to low. Stir in heavy cream, Parmesan, and ¾ cup mozzarella. Heat gently (do not boil) until melted and creamy.
  7. Add cooked tortellini and toss gently to coat.
  8. Transfer mixture to a greased 9×9-inch or 2-quart baking dish. Top with remaining ¼ cup mozzarella.
  9. Bake at 375°F (190°C) for 20–25 minutes, until bubbly and golden on top.
  10. Garnish with fresh parsley and serve hot!

Great with garlic bread or a crisp green salad on the side!

💡 Make it heartier: Add sautéed mushrooms, spinach, or sun-dried tomatoes.
