Garlic Tomato Chicken with Mozzarella: A One-Pan Weeknight Wonder

Ingredients

• 4 chicken breasts • 2 cups cherry tomatoes, halved • 1 cup mozzarella cheese, shredded • 4 cloves garlic, minced • 3 tbsp olive oil • 2 tbsp fresh basil, chopped • 1 tbsp fresh oregano • 1 tsp lemon juice • ½ tsp salt • ¼ tsp black pepper • 2 tbsp butter • 2 tbsp balsamic vinegar


Instructions

  1. Preheat oven to 400°F
  2. Season chicken breasts with salt and pepper
  3. Heat 2 tbsp olive oil in oven-safe skillet
  4. Sear chicken 5-6 minutes per side until golden
  5. Add remaining olive oil to skillet
  6. Sauté garlic 1 minute until fragrant
  7. Add cherry tomatoes, basil, and oregano
  8. Cook 3-4 minutes until tomatoes start to soften
  9. Stir in lemon juice and balsamic vinegar
  10. Top chicken with tomato mixture
  11. Sprinkle with mozzarella cheese
  12. Transfer skillet to oven
  13. Bake 10-15 minutes until cheese melts
  14. Let rest 5 minutes before serving
