Ingredients
• 4 chicken breasts • 2 cups cherry tomatoes, halved • 1 cup mozzarella cheese, shredded • 4 cloves garlic, minced • 3 tbsp olive oil • 2 tbsp fresh basil, chopped • 1 tbsp fresh oregano • 1 tsp lemon juice • ½ tsp salt • ¼ tsp black pepper • 2 tbsp butter • 2 tbsp balsamic vinegar
Instructions
- Preheat oven to 400°F
- Season chicken breasts with salt and pepper
- Heat 2 tbsp olive oil in oven-safe skillet
- Sear chicken 5-6 minutes per side until golden
- Add remaining olive oil to skillet
- Sauté garlic 1 minute until fragrant
- Add cherry tomatoes, basil, and oregano
- Cook 3-4 minutes until tomatoes start to soften
- Stir in lemon juice and balsamic vinegar
- Top chicken with tomato mixture
- Sprinkle with mozzarella cheese
- Transfer skillet to oven
- Bake 10-15 minutes until cheese melts
- Let rest 5 minutes before serving
