• 4 large eggs
• 2 tbsp milk or cream (optional—makes eggs extra fluffy)
• 2 oz soft goat cheese (plain or herbed)
• 1 tbsp fresh chives or dill, chopped
• 1 cup baby spinach
• ¼ cup cherry tomatoes, halved
• 1 large whole wheat, spinach, or low-carb tortilla (10″)
• 1 tsp olive oil or butter
• Salt & black pepper to taste
• Optional: sliced avocado, crumbled feta, or hot honey drizzle
Instructions
- Whisk eggs, milk (if using), salt, and pepper. Heat oil in a nonstick skillet over medium-low. Cook eggs low and slow, stirring gently, until softly set (keep them moist!).
- Warm tortilla in a dry skillet 20 sec per side (or microwave 15 sec wrapped in damp paper towel).
- Spread goat cheese down center of tortilla. Top with scrambled eggs, spinach, tomatoes, and herbs. Add extras (avocado, etc.) if using.
- Fold in sides, then roll tightly from bottom to top.
- Optional crisp finish: Heat ½ tsp oil in skillet. Place wrap seam-side down; cook 1–2 mins per side until golden.
- Slice in half diagonally. Serve warm.
