Goat Cheese Breakfast Wrap: A Creamy, Protein-Packed Morning Favorite

Ingredients

• 4 large eggs
• 2 tbsp milk or cream (optional—makes eggs extra fluffy)
• 2 oz soft goat cheese (plain or herbed)
• 1 tbsp fresh chives or dill, chopped
• 1 cup baby spinach
• ¼ cup cherry tomatoes, halved
• 1 large whole wheat, spinach, or low-carb tortilla (10″)
• 1 tsp olive oil or butter
• Salt & black pepper to taste
• Optional: sliced avocado, crumbled feta, or hot honey drizzle


Instructions

  1. Whisk eggs, milk (if using), salt, and pepper. Heat oil in a nonstick skillet over medium-low. Cook eggs low and slow, stirring gently, until softly set (keep them moist!).
  2. Warm tortilla in a dry skillet 20 sec per side (or microwave 15 sec wrapped in damp paper towel).
  3. Spread goat cheese down center of tortilla. Top with scrambled eggs, spinach, tomatoes, and herbs. Add extras (avocado, etc.) if using.
  4. Fold in sides, then roll tightly from bottom to top.
  5. Optional crisp finish: Heat ½ tsp oil in skillet. Place wrap seam-side down; cook 1–2 mins per side until golden.
  6. Slice in half diagonally. Serve warm.
