Ingredients
1 cup all-purpose flour
1 tsp baking powder
½ tsp salt
¼ tsp black pepper
2 large eggs
⅓ cup milk
1½ cups corn kernels (fresh, canned, or frozen & thawed)
¼ cup chopped green onions (optional)
½ cup shredded cheddar cheese (optional)
Oil for frying
Instructions
In a bowl, whisk flour, baking powder, salt, and pepper.
In another bowl, beat eggs and milk together. Stir into the dry ingredients.
Fold in corn, green onions, and cheese (if using).
Heat oil in a skillet over medium heat.
Drop heaping spoonfuls of batter into the skillet, flatten slightly.
Cook 2–3 minutes per side until golden brown and cooked through.
Drain on paper towels and serve warm!
