Ingredients
• 1 lb elbow macaroni • 1 cup mayonnaise • ¼ cup apple cider vinegar • 2 tbsp sugar • 1 tsp mustard • 1 cup carrots, grated • ½ cup onion, finely diced • ½ cup celery, diced • ¼ cup red bell pepper, diced • 2 tbsp fresh parsley, chopped • 1 tbsp fresh dill, chopped • Salt and pepper to taste
Instructions
- Cook macaroni according to package directions
- Drain and rinse with cold water until cooled
- In large bowl, whisk mayonnaise, vinegar, sugar, and mustard
- Add cooled macaroni to dressing
- Stir in carrots, onion, celery, and bell pepper
- Add fresh parsley and dill
- Season with salt and pepper
- Mix until everything is well coated
- Cover and refrigerate at least 2 hours
- Stir before serving
- Garnish with extra herbs if desired
