Grandma’s Classic Macaroni Salad: A Creamy, Tangy Side Dish That Brings Back Memories

Ingredients

• 1 lb elbow macaroni • 1 cup mayonnaise • ¼ cup apple cider vinegar • 2 tbsp sugar • 1 tsp mustard • 1 cup carrots, grated • ½ cup onion, finely diced • ½ cup celery, diced • ¼ cup red bell pepper, diced • 2 tbsp fresh parsley, chopped • 1 tbsp fresh dill, chopped • Salt and pepper to taste


Instructions

  1. Cook macaroni according to package directions
  2. Drain and rinse with cold water until cooled
  3. In large bowl, whisk mayonnaise, vinegar, sugar, and mustard
  4. Add cooled macaroni to dressing
  5. Stir in carrots, onion, celery, and bell pepper
  6. Add fresh parsley and dill
  7. Season with salt and pepper
  8. Mix until everything is well coated
  9. Cover and refrigerate at least 2 hours
  10. Stir before serving
  11. Garnish with extra herbs if desired
