Description
Crisp, tangy, and sweet—this tropical slaw is pure sunshine in a bowl!
Ingredients
4 cups shredded cabbage (or coleslaw mix)
1 cup shredded carrots
1 cup crushed pineapple (drained)
¼ cup chopped green onions
⅓ cup plain Greek yogurt or mayo
1 tbsp apple cider vinegar
1 tbsp maple syrup or honey
Salt & pepper to taste
Optional: 2 tbsp chopped cilantro
Instructions
In a large bowl, combine cabbage, carrots, pineapple, and green onions.
In a small bowl, whisk together yogurt (or mayo), vinegar, maple syrup, salt, and pepper.
Pour dressing over slaw mixture and toss until well coated.
Chill in the fridge for at least 30 minutes to let flavors meld.
Garnish with cilantro if desired, and serve cold!
