Ingredients
1 lb ground beef or turkey
1 small onion, diced
1 can (15 oz) black beans, drained
1 can (15 oz) kidney beans, drained
1 can (15 oz) corn, drained
1 can (15 oz) diced tomatoes
1 can (10 oz) Rotel (diced tomatoes with green chilies)
1 packet taco seasoning
1 packet ranch dressing mix
2 cups beef broth or water
Instructions
In a large pot, brown ground beef with onion until fully cooked. Drain excess fat.
Stir in beans, corn, tomatoes, Rotel, taco seasoning, ranch mix, and broth.
Bring to a boil, then reduce heat and simmer for 20–30 minutes.
Serve hot with toppings like cheese, sour cream, tortilla chips, or avocado!
