Ingredients
• 1 lb (450g) boneless, skinless chicken breasts, cut into cubes
• 2 tbsp honey
• 1 tbsp olive oil
• 1 tbsp chipotle sauce (or 1 tsp chipotle in adobo, minced)
• 2 cloves garlic, minced
• 1 tsp ground cumin
• 1 tsp smoked paprika
• 1/2 tsp salt
• 1/4 tsp black pepper
• Wooden or metal skewers (if using wooden, soak in water for 30 mins)
Instructions
- In a bowl, whisk honey, olive oil, chipotle sauce, garlic, cumin, paprika, salt, and pepper.
- Add chicken cubes and toss to coat. Marinate 15–30 minutes (or up to 2 hours).
- Preheat grill or grill pan to medium-high heat.
- Thread chicken onto skewers, leaving small gaps between pieces.
- Grill 3–4 minutes per side, turning occasionally, until chicken is golden and cooked through (internal temp 165°F / 74°C).
- Drizzle with extra honey or chipotle for serving, if desired.
