Honey-Glazed Roasted Brussels Sprouts with Bacon – Sweet, Savory & Crispy

Ingredients

• 1 lb (450g) Brussels sprouts, trimmed and halved
• 2 tbsp olive oil
• Salt & black pepper to taste
• 6 strips bacon, chopped
• 2 tbsp honey (or maple syrup for vegan)
• 1 tsp Dijon mustard (optional, for depth)
• 1 clove garlic, minced (optional)
• Fresh thyme or parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss Brussels sprouts with olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
  3. Roast 20–25 minutes, until tender and golden-brown at the edges.
  4. While sprouts roast, cook bacon in a skillet over medium heat until crispy. Remove and set aside, leaving 1 tbsp drippings in the pan.
  5. In the same pan, add honey, Dijon (if using), and garlic. Stir 1 minute until warm and bubbly.
  6. Remove roasted sprouts from oven. Drizzle with honey glaze and toss gently to coat.
  7. Top with crumbled bacon and fresh herbs.
  8. Serve hot—they’re best right out of the oven!
