Ingredients
• 1 lb (450g) Brussels sprouts, trimmed and halved
• 2 tbsp olive oil
• Salt & black pepper to taste
• 6 strips bacon, chopped
• 2 tbsp honey (or maple syrup for vegan)
• 1 tsp Dijon mustard (optional, for depth)
• 1 clove garlic, minced (optional)
• Fresh thyme or parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Toss Brussels sprouts with olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
- Roast 20–25 minutes, until tender and golden-brown at the edges.
- While sprouts roast, cook bacon in a skillet over medium heat until crispy. Remove and set aside, leaving 1 tbsp drippings in the pan.
- In the same pan, add honey, Dijon (if using), and garlic. Stir 1 minute until warm and bubbly.
- Remove roasted sprouts from oven. Drizzle with honey glaze and toss gently to coat.
- Top with crumbled bacon and fresh herbs.
- Serve hot—they’re best right out of the oven!
