Tender chicken filled with Italian-seasoned goodness—mozzarella, spinach, and a flavorful herbed stuffing!
Ingredients
4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
½ cup mozzarella cheese, shredded
¼ cup sun-dried tomatoes, chopped
1 tbsp Italian seasoning
2 tbsp olive oil
2 cloves garlic, minced
½ tsp salt
½ tsp black pepper
1 tbsp grated Parmesan cheese
1 cup marinara sauce (optional, for serving)
Instructions
Preheat oven to 375°F (190°C).
In a small bowl, mix spinach, mozzarella, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
Stuff each chicken breast with the spinach and cheese mixture, securing with toothpicks if needed.
Heat olive oil in a large skillet over medium-high heat. Brown the chicken on both sides (about 3–4 minutes per side).
Transfer the chicken to a baking dish and sprinkle with Parmesan cheese.
Bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
Serve with marinara sauce if desired, and enjoy!
