Kentucky Slow Cooker Potatoes

Ingredients

• 3 lbs (1.4 kg) Yukon Gold or red potatoes, peeled and cut into 1½” chunks
• 1 cup (2 sticks / 230g) unsalted butter, melted
• 1 small onion, finely chopped
• 2 garlic cloves, minced
• 1 tsp salt
• ½ tsp black pepper
• ½ cup shredded sharp cheddar cheese (optional)
• Optional garnish: chopped fresh chives or parsley


Instructions

  1. Place potatoes in slow cooker.
  2. In a bowl, combine melted butter, onion, garlic, salt, and pepper. Pour evenly over potatoes; toss gently to coat.
  3. Cover and cook on LOW 6–7 hours or HIGH 3–4 hours, until potatoes are fork-tender and creamy (they’ll absorb the butter as they cook).
  4. If using cheese, sprinkle over top during last 15–20 minutes of cooking to melt.
  5. Stir gently before serving. Garnish with chives or parsley if desired.
