Ingredients
• 3 lbs (1.4 kg) Yukon Gold or red potatoes, peeled and cut into 1½” chunks
• 1 cup (2 sticks / 230g) unsalted butter, melted
• 1 small onion, finely chopped
• 2 garlic cloves, minced
• 1 tsp salt
• ½ tsp black pepper
• ½ cup shredded sharp cheddar cheese (optional)
• Optional garnish: chopped fresh chives or parsley
Instructions
- Place potatoes in slow cooker.
- In a bowl, combine melted butter, onion, garlic, salt, and pepper. Pour evenly over potatoes; toss gently to coat.
- Cover and cook on LOW 6–7 hours or HIGH 3–4 hours, until potatoes are fork-tender and creamy (they’ll absorb the butter as they cook).
- If using cheese, sprinkle over top during last 15–20 minutes of cooking to melt.
- Stir gently before serving. Garnish with chives or parsley if desired.
