A delightful blend of savory chicken, rich cheese, and zesty BBQ!


Ingredients

🍖 1 ½ lbs cooked shredded chicken breast
🍯 8.5 ounces sugar-free BBQ sauce
🧄 ½ teaspoon garlic salt
🧅 ½ cup diced red onion
🥬 2 ½ cups coleslaw mix or shredded cabbage
🧀 1 cup Monterey Jack cheese, grated
🧀 1 cup sharp cheddar cheese, grated
🥓 6 slices bacon, cooked and crumbled


Instructions

Preheat the oven to 400°F.
Place the shredded chicken in a 10″ or larger cast-iron skillet. Pour the BBQ sauce over the chicken.
Toss in the garlic salt and diced red onion. Add half of the grated Monterey Jack and sharp cheddar cheese.
Mix until they are well combined.
Top the chicken mixture with the coleslaw mix or shredded cabbage. Sprinkle the remaining grated cheese and crumbled bacon on top.
Place the skillet in the preheated oven.
Bake for 15 minutes or until the cheese is bubbly and golden.
Remove from the oven and serve hot.
