Description

Crispy rolled tortillas filled with seasoned ground beef and cheese — these keto taquitos are a perfect handheld snack, appetizer, or quick dinner idea that’s low-carb and full of bold flavor!


Ingredients

½ lb ground beef (or ground bison for lower fat)
¼ cup finely chopped yellow onion
2 tbsp water or broth (for simmering)
1 tsp taco seasoning (ensure it’s sugar-free)
½ tsp garlic powder
¼ tsp cumin
Salt and pepper to taste
8–10 large low-carb tortillas or lettuce wraps (for wrap version)
½ cup shredded cheddar or mozzarella cheese
Oil spray (for crispiness)
FOR KETO VERSION:
Use almond flour tortillas or make your own keto dough. For extra richness, stir in a spoonful of sour cream into the beef mixture.


Instructions

In a skillet over medium heat, cook ground beef until browned. Drain excess fat if needed.
Add onion , taco seasoning , garlic powder , cumin , salt, and pepper. Stir in water or broth and simmer for 3–4 minutes until thickened.
Stir in cheddar cheese and mix until melted and slightly cooled.
Lay out each low-carb tortilla and place a small spoonful of beef-cheese mixture down the center.
Roll up tightly like a burrito, tucking in the sides as you go.
Place seam-side down on a baking sheet and lightly spray with oil.
Bake at 400°F (200°C) for 12–15 minutes or air fry at 375°F (190°C) for 6–8 minutes , flipping halfway through.
Serve warm with guacamole, salsa, or keto ranch for dipping.
