Savory beef, creamy sauce, and crunchy veggies wrapped in cheese!
Ingredients
1 lb. Lean ground beef
1 Tbsp. Olive oil
1-2 C. Shredded lettuce
16 Small dill pickle chips
2 C. Shredded cheddar cheese (hand shredded from a block)
For the sauce: ¼ C. Mayonnaise
1 Tbsp. Dill pickle relish
1 Tbsp. Yellow mustard
½ Tbsp. Apple cider vinegar
½ Tbsp. Keto BBQ sauce
¼ tsp. Garlic powder
¼ tsp. Paprika
Instructions
Preheat the oven to 375 degrees.
In a bowl, combine the ingredients for the sauce and stir to combine completely.
Heat the olive oil in a skillet over medium-high heat on the stove.
Add the ground beef to the skillet, and cook until completely browned. Strain, and set the ground beef aside.
Form 3-4 inch wide circles of shredded cheese on a parchment lined baking sheet. Be sure to leave some room between each circle of cheese.
Bake the cheese for 8-10 minutes until it just starts to brown on the edges and has a lace-like appearance. Let the cheese cool for a few minutes until it is just cool enough to handle.
Pour the sauce into a bowl with the ground beef, and stir to combine.
Place a line of shredded lettuce, the ground beef mixture, and 2 pickle chips down the center of each cheese circle and wrap the cheese around it.
Let the wraps set for several more minutes to cool and then serve.
