Ingredients
2 cups finely chopped or riced cauliflower (raw or lightly steamed)
4 slices cooked and crumbled bacon
¼ cup diced cherry tomatoes or halved grape tomatoes
2 tbsp mayonnaise or Greek yogurt (keto-friendly)
1 tbsp apple cider vinegar or lemon juice (for dressing)
½ tsp Dijon mustard (optional)
Salt and pepper to taste
2 tbsp green onions or fresh chives, sliced (for extra crunch)

Use full-fat mayo , unsweetened tomatoes , and skip high-sugar condiments. For extra creaminess, add a spoonful of sour cream or ranch dressing.
Instructions
In a large bowl, combine cauliflower , crumbled bacon , cherry tomatoes , and green onions .
In a small bowl, mix mayonnaise , apple cider vinegar , Dijon mustard , salt, and pepper for the dressing.
Pour dressing over the salad and toss until well coated.
Optional: Add avocado chunks or hard-boiled egg for extra healthy fats and protein.
Chill in the fridge for 10–15 minutes before serving (optional but recommended).
