Ingredients
1 teaspoon sea salt
½ teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon smoked paprika
4 boneless, skinless chicken breasts (about 1 ½ pounds)
2 tablespoons butter or olive oil
6 ounces cream cheese, softened
3 tablespoons ranch dressing
2 cloves garlic, minced
¾ cup shredded sharp cheddar cheese, divided
6 slices bacon, cooked crisp and chopped, divided
3 green onions, thinly sliced, divided
Instructions
1. Preheat oven to 375°F. Mix salt, pepper, onion powder, garlic powder, and paprika. Season chicken on both sides. Cut slits to create pockets.
2. Heat butter in a skillet over medium-high heat. Sear chicken for 2-3 minutes on each side until golden. Remove from pan.
3. In a bowl, mix cream cheese, ranch dressing, garlic, half cheddar, half bacon, and half green onions. Stuff mixture into chicken pockets and spread remaining on top.
4. Place chicken in a baking dish, top with remaining cheddar, and bake for 15 minutes until cooked through. Garnish with remaining bacon and green onions before serving.
