Ingredients
12.5 ounces Canned Chicken, drained well
1 1/2 cups Coleslaw mix
1/3 cup Matchstick Carrots
1/4 cup Green Onions, chopped
1/3 cup Plain Greek Yogurt
1/2 tsp Sugar-Free Honey
1 tsp Dijon Mustard
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
2 cups Shredded Mozzarella Cheese
Salt and Pepper to taste
Instructions
Preheat the oven to 425 degrees.
Arrange the cheese into 8 evenly sized circles of cheese on a parchment lined baking sheet. You may need to repeat this step depending on the size of your baking sheet.
Place the cheese into the oven, and cook for 8-10 minutes, or until the edges are browned and crispy.
In a mixing bowl, combine the remaining ingredients.
Remove the cheese from the oven, and allow to cool for 2 minutes.
Place a layer of the chicken mixture down the center of each circle.
Carefully roll the cheese closed over the filling.
Allow the rollups to cool and the cheese to crisp up before serving.
