6 large hard-boiled eggs, peeled
2 tbsp mayonnaise or Greek yogurt (full-fat)
1 tbsp sour cream or cream cheese (for extra richness)
2 tbsp crumbled cooked bacon
Salt and pepper to taste
¼ tsp smoked paprika or garlic powder (optional for flavor boost)
A few drops of hot sauce (optional)
Fresh lettuce or spinach (for garnish)
🥗 FOR KETO VERSION:
Use unsweetened mayo , full-fat dairy , and ensure your bacon is sugar-free . For vegan version, use mashed tofu + lemon juice and plant-based bacon .


Instructions

Cut hard-boiled eggs in half lengthwise. Carefully scoop out yolks into a bowl.
Add mayonnaise , sour cream or cream cheese , salt, pepper, and optional paprika or hot sauce .
Mash or blend until smooth and creamy. Fold in crumbled bacon .
Spoon or pipe mixture back into the egg white halves.
Top each with a small piece of lettuce or spinach before serving.
