  • Total Time: 20 mins

Description

Tender, juicy meatballs in a creamy, tangy sauce — these keto-friendly Swedish meatballs are rich with flavor and perfect for cozy dinners or meal prep!

Ingredients

Scale

1 lb ground beef (or mix with pork for extra moisture)
¼ cup finely chopped yellow onion
1 tbsp grated Parmesan cheese (optional, or use nutritional yeast for dairy-free)
½ tsp dried thyme
½ tsp allspice or nutmeg
¼ tsp garlic powder
Salt and pepper to taste
1 egg (to bind)
2 tbsp olive oil (for cooking)
For the Creamy Sauce:

¼ cup beef broth
¼ cup heavy cream or full-fat coconut cream
2 tbsp sour cream or Greek yogurt (for tanginess)
1 tbsp butter
½ tsp Worcestershire sauce (keto-approved)
½ tsp Dijon mustard (optional)
Fresh parsley for garnish (optional)

Instructions

In a large bowl, mix ground beef, onion, Parmesan (if using), thyme, allspice, garlic powder, salt, and pepper.
Add egg and mix well with your hands until just combined (don’t overmix!).
Roll into small meatballs (~1-inch).
Heat olive oil in a skillet over medium heat. Brown meatballs on all sides until cooked through (~8–10 minutes total). Remove and set aside.
In the same pan, melt butter. Stir in beef broth and heavy cream. Simmer for 3–4 minutes.
Add sour cream, Worcestershire, and Dijon mustard if using. Mix until smooth and thickened.
Return meatballs to the pan and simmer gently in sauce for 2–3 minutes.
Serve warm with cauliflower mash, zucchini noodles, or keto gravy.
