Ingredients
 8 ounces cream cheese (block)
 3 cups shredded mozzarella cheese (low moisture, part skim)
 4 large eggs (at room temperature)
 4 tablespoons aluminum-free baking powder
 1 ⅓ cups almond flour
 1 tablespoon unsalted butter
Instructions
1. Preheat the oven to 400°F (200°C).
2. Melt cream cheese and mozzarella over low heat until smooth.
3. Combine melted cheeses, baking powder, almond flour, and eggs in a bowl. Mix until smooth and refrigerate for 10-20 minutes.
4. Roll into 24 balls and chill for another 10 minutes.
5. Grease a 10.5″ cast iron skillet with butter.
6. Place dough balls in the skillet, touching each other. Bake for 20-25 minutes until golden brown.
