Crispy skins filled with fluffy, cheesy, bacon-packed comfort in every bite!
Ingredients
4 large russet potatoes
½ cup sour cream
¼ cup unsalted butter, melted
½ cup cooked bacon, crumbled
1 cup shredded sharp cheddar cheese (plus extra for topping)
¼ tsp garlic powder
Salt and black pepper to taste
2 tbsp sliced scallions
Fresh parsley for garnish
Instructions
Preheat oven to 400°F (200°C). Scrub and dry potatoes.
Pierce potatoes with a fork and bake for 45–60 minutes until fork-tender.
Let cool slightly, then cut each potato in half lengthwise. Scoop out the insides into a bowl, leaving a thin layer of potato in the skin.
Mash the potato with sour cream, melted butter, garlic powder, salt, and pepper. Stir in bacon and cheese.
Spoon filling back into the potato skins. Top with more cheese.
Return to oven and bake for 15–20 minutes, until heated through and cheese is bubbly.
Garnish with scallions and parsley. Serve hot!
