Ingredients
• 2 lbs butternut squash, peeled and cubed • 2 tbsp olive oil • 4 oz goat cheese, crumbled • 2 tbsp fresh rosemary, chopped • 2 cloves garlic, minced • 2 tbsp butter • ¼ cup heavy cream • Salt and pepper to taste • 2 tbsp chopped walnuts for garnish
Instructions
- Preheat oven to 400°F
- Toss butternut squash with 1 tbsp olive oil
- Season with salt and pepper
- Roast 25-30 minutes until tender and caramelized
- Heat remaining olive oil in small skillet
- Sauté garlic and rosemary until fragrant
- Transfer roasted squash to large bowl
- Add butter and mash with potato masher
- Stir in heavy cream and garlic-rosemary oil
- Fold in crumbled goat cheese
- Season with salt and pepper to taste
- Garnish with chopped walnuts
- Serve warm
