Mashed Butternut Squash with Goat Cheese and Rosemary: A Creamy, Elegant Side Dish

Ingredients

• 2 lbs butternut squash, peeled and cubed • 2 tbsp olive oil • 4 oz goat cheese, crumbled • 2 tbsp fresh rosemary, chopped • 2 cloves garlic, minced • 2 tbsp butter • ¼ cup heavy cream • Salt and pepper to taste • 2 tbsp chopped walnuts for garnish


Instructions

  1. Preheat oven to 400°F
  2. Toss butternut squash with 1 tbsp olive oil
  3. Season with salt and pepper
  4. Roast 25-30 minutes until tender and caramelized
  5. Heat remaining olive oil in small skillet
  6. Sauté garlic and rosemary until fragrant
  7. Transfer roasted squash to large bowl
  8. Add butter and mash with potato masher
  9. Stir in heavy cream and garlic-rosemary oil
  10. Fold in crumbled goat cheese
  11. Season with salt and pepper to taste
  12. Garnish with chopped walnuts
  13. Serve warm
