Mashed Potato Cheese Puffs

Ingredients

• 2 cups leftover mashed potatoes (not too wet—should hold shape)
• 1 large egg
• ½ cup shredded sharp cheddar cheese
• ¼ cup grated Parmesan
• 2 tbsp chopped chives or green onions
• ¼ tsp garlic powder
• ¼ tsp black pepper
• ¼–½ cup all-purpose flour or almond flour (as needed for binding)
• Oil for frying (or cooking spray for baking)
Optional add-ins:
• Crispy bacon bits
• Diced roasted garlic
• Pinch of cayenne for heat

Instructions

  1. In a bowl, combine mashed potatoes, egg, cheddar, Parmesan, chives, garlic powder, and pepper. Mix well.
  2. Add flour 1 tbsp at a time until mixture is firm enough to roll into balls (usually ¼–½ cup total).
  3. Roll into 1″ balls; place on parchment-lined tray. Chill 15–20 min to firm up (helps prevent spreading).
  4. Cook (choose one):
    • Pan-fry: Heat ½” oil to 350°F (175°C). Fry 2–3 min per side until golden brown. Drain on paper towels.
    • Bake: Place on sheet; spray with oil. Bake at 425°F (220°C) 20–25 min, flipping halfway, until crisp.
  5. Serve hot with sour cream, ranch, or marinara for dipping!
