Ingredients
• 1½ lbs ground beef (85/15)
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 1 (15 oz) can diced tomatoes, drained (or 1½ cups fresh diced)
• 1 tsp Worcestershire sauce
• 1 tsp dried oregano
• 2½ lbs russet potatoes, peeled & thinly sliced (~⅛”)
• 1½ cups shredded cheddar cheese (divided)
• ½ cup milk or broth
• Salt & black pepper to taste
Topping:
• 2 tbsp melted butter
• ½ cup crushed buttery crackers (e.g., Ritz) or keto-friendly pork rind crumbs
• 1 tbsp chopped parsley (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13″ baking dish.
- In a skillet, brown beef and onion over medium heat. Drain excess fat. Stir in garlic, tomatoes, Worcestershire, oregano, salt, and pepper; simmer 5 mins.
- In the baking dish, layer half the potatoes. Top with half the meat mixture and ½ cup cheese. Repeat layers. Pour milk/broth evenly over top.
- Cover tightly with foil. Bake 45 mins.
- Uncover. Sprinkle with remaining ½ cup cheese. Mix topping ingredients; scatter over cheese.
- Bake uncovered 20–25 mins more, until potatoes are tender and topping is golden. Let rest 10 mins before serving.
