Description
Savory mini meatloaves topped with creamy mashed potato “frosting”!
Ingredients
For the meatloaf:
1 lb ground beef (or half beef, half turkey)
½ cup breadcrumbs
1 egg
¼ cup milk
½ small onion, finely chopped
2 cloves garlic, minced
2 tbsp ketchup
1 tsp Worcestershire sauce
½ tsp salt, ¼ tsp black pepper
For the mashed potato topping:
2 cups mashed potatoes (leftover or freshly made)
2 tbsp butter
¼ cup milk
Salt & pepper to taste
Optional: shredded cheddar, chives, or bacon bits for garnish
Instructions
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
In a bowl, combine all meatloaf ingredients and mix well.
Divide mixture evenly into muffin cups and press down gently.
Bake for 20–25 minutes or until cooked through (internal temp 160°F).
Meanwhile, warm mashed potatoes and stir in butter and milk until fluffy.
Once meatloaf “cupcakes” are done, let cool slightly.
Pipe or spoon mashed potatoes on top like frosting. Garnish if desired and serve!
