Mexican Tater Tot Casserole

Ingredients

• 1½ lbs (680g) ground beef (85/15)
• 1 small onion, diced
• 2 garlic cloves, minced
• 1 (1 oz) packet taco seasoning (or 2 tbsp homemade)
• ½ cup water
• 1 (15 oz) can black beans, drained & rinsed
• 1 (15 oz) can corn, drained
• 1½ cups shredded Mexican blend cheese
• 1 (32 oz) bag frozen tater tots
• Optional toppings: sour cream, salsa, avocado, cilantro, jalapeños

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 9×13″ baking dish.
  2. In a skillet over medium heat, brown ground beef with onion until no pink remains. Drain excess fat.
  3. Stir in garlic, taco seasoning, and water. Simmer 3–5 min.
  4. Add black beans and corn; cook 2 more min. Remove from heat.
  5. Spread beef mixture evenly in baking dish. Sprinkle with 1 cup cheese.
  6. Arrange tater tots in a tight, overlapping layer over top.
  7. Bake 35–40 minutes until tots are golden and crispy.
  8. Sprinkle remaining ½ cup cheese over hot casserole; let melt 2–3 min.
  9. Serve hot with your favorite toppings!
