Ingredients
• 1½ lbs (680g) ground beef (85/15)
• 1 small onion, diced
• 2 garlic cloves, minced
• 1 (1 oz) packet taco seasoning (or 2 tbsp homemade)
• ½ cup water
• 1 (15 oz) can black beans, drained & rinsed
• 1 (15 oz) can corn, drained
• 1½ cups shredded Mexican blend cheese
• 1 (32 oz) bag frozen tater tots
• Optional toppings: sour cream, salsa, avocado, cilantro, jalapeños

• 1 (15 oz) can black beans, drained & rinsed
• 1 (15 oz) can corn, drained

Instructions
- Preheat oven to 400°F (200°C). Grease a 9×13″ baking dish.
- In a skillet over medium heat, brown ground beef with onion until no pink remains. Drain excess fat.
- Stir in garlic, taco seasoning, and water. Simmer 3–5 min.
- Add black beans and corn; cook 2 more min. Remove from heat.
- Spread beef mixture evenly in baking dish. Sprinkle with 1 cup cheese.
- Arrange tater tots in a tight, overlapping layer over top.
- Bake 35–40 minutes until tots are golden and crispy.
- Sprinkle remaining ½ cup cheese over hot casserole; let melt 2–3 min.
- Serve hot with your favorite toppings!
