Ingredients
• 2 cups rolled oats • ¼ cup chia seeds • 1 cup water • 2 eggs • 2 tbsp olive oil • 1 tsp salt • 1 tsp baking powder • 1 tbsp honey or maple syrup • 1 tsp apple cider vinegar
Instructions
- Preheat oven to 350°F
- Grease 9×5 inch loaf pan
- Grind rolled oats in food processor until flour-like
- In large bowl, mix oat flour and chia seeds
- In separate bowl, whisk water, eggs, olive oil, and honey
- Add apple cider vinegar to wet ingredients
- Pour wet ingredients into dry ingredients
- Add salt and baking powder
- Mix until well combined
- Let batter rest 10 minutes
- Pour into prepared loaf pan
- Bake 45-50 minutes until golden brown
- Toothpick should come out clean
- Cool 15 minutes before slicing
