Ingredients
• 1 lb ground beef or turkey • 1 onion, diced • 2 cloves garlic, minced • 1 bell pepper, diced • 1 cup long grain rice • 1 can (15oz) black beans, drained • 1 can (15oz) corn, drained • 1 can (10oz) diced tomatoes with green chilies • 2 cups chicken broth • 1 tsp cumin • 1 tsp chili powder • ½ tsp paprika • 1 cup cheddar cheese, shredded • 2 tbsp fresh cilantro, chopped • 2 tbsp vegetable oil
Instructions
- Heat oil in large skillet or Dutch oven
- Brown ground meat over medium-high heat
- Add onion, garlic, and bell pepper
- Cook 5 minutes until vegetables soften
- Stir in rice and cook 2 minutes
- Add cumin, chili powder, and paprika
- Pour in chicken broth and diced tomatoes
- Bring to boil, then reduce heat
- Cover and simmer 18-20 minutes until rice is tender
- Stir in black beans and corn
- Cook 5 minutes more
- Sprinkle with cheese and cover until melted
- Garnish with fresh cilantro
- Serve hot
