Instructions
- Prep the wings: Pat wings very dry with paper towels—this is crucial for crisp skin.
- In a large bowl, toss wings with baking powder, salt, pepper, garlic powder, and paprika. Add olive oil if using.
- Arrange wings in a single layer on a wire rack set over a baking sheet (this allows air circulation).
- Refrigerate uncovered for at least 1 hour (or up to overnight)—this dries the skin even more for maximum crisp!
- Preheat oven to 425°F (220°C).
- Bake 45–50 minutes, flipping halfway, until golden brown, crispy, and internal temperature reaches 165°F (74°C).
- Toss in your favorite sauce after baking if desired, or serve plain with dips.
