Ingredients
• 4 thick pork chops • 1 cup grated Parmesan cheese • ½ cup breadcrumbs • 2 eggs, beaten • 2 tbsp Dijon mustard • 2 cloves garlic, minced • 1 tsp dried thyme • 1 tsp dried rosemary • ½ tsp salt • ¼ tsp black pepper • 3 tbsp olive oil • 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 425°F
- Line baking sheet with parchment paper
- Mix Parmesan, breadcrumbs, garlic, thyme, rosemary, salt, and pepper
- In shallow dish, whisk eggs and mustard
- Dip pork chops in egg mixture
- Coat with Parmesan mixture, pressing to adhere
- Heat olive oil in oven-safe skillet
- Sear pork chops 3-4 minutes per side until golden
- Transfer skillet to oven
- Bake 10-15 minutes until internal temperature reaches 145°F
- Let rest 5 minutes before serving
- Garnish with fresh parsley
