Description
Tender beef and sweet bell peppers simmered in a savory, saucy blend!
Ingredients
1½ lbs beef sirloin or flank steak, sliced into strips
2 bell peppers (any color), sliced
1 onion, sliced
3 cloves garlic, minced
½ cup low-sodium soy sauce
1 tbsp brown sugar
1 tbsp cornstarch
1 tsp ground ginger
½ tsp black pepper
1 cup beef broth
2 tbsp olive oil (for browning, optional)
Instructions
(Optional) Brown steak in a skillet with olive oil for extra flavor.
Add steak, peppers, onion, and garlic to the crock pot.
In a bowl, whisk soy sauce, beef broth, brown sugar, ginger, black pepper, and cornstarch. Pour over the ingredients.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until steak is tender.
Stir before serving. Great over rice or noodles!
