Ingredients : 2 cups bell peppers (any color, thinly sliced)
1 cup red onion (thinly sliced)
1 clove garlic (minced)
1 cup white vinegar
1/2 cup water
1/4 cup sugar
1 tsp salt
1/2 tsp mustard seeds or celery seeds (optional for extra flavor)
Instructions
In a small saucepan, combine vinegar, water, sugar, salt, and seeds (if using). Bring to a boil, stirring until sugar dissolves.
Place sliced peppers, onions, and garlic in a heatproof jar or bowl.
Pour the hot vinegar mixture over the veggies. Let cool to room temp.
Cover and refrigerate for at least 2 hours (better overnight) before serving.
