Ingredients

1 lb ground (minced) beef
4 medium potatoes, peeled and thinly sliced
1 onion, finely chopped
2 cloves garlic, minced
1 cup beef stock
1 cup canned tomatoes (crushed or diced)
1 tbsp tomato paste
1 tsp paprika
1 tsp dried thyme or mixed herbs
Salt and pepper to taste
2 tbsp olive oil


Instructions

Preheat oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Add onion and garlic; sauté until softened.
Add ground beef and cook until browned and cooked through. Drain excess fat if needed.
Stir in paprika, thyme, salt, pepper, crushed tomatoes, tomato paste, and beef stock. Simmer for 5–10 minutes until thickened.
Transfer the meat mixture into a greased baking dish (8×8 inch or similar).
Layer the sliced potatoes evenly on top of the meat.
Cover with foil and bake for 40 minutes. Remove foil and bake an additional 20–25 minutes until potatoes are golden and crisp on top.
Let rest 5–10 minutes before serving.
