Ingredients
• 1 lb ground beef • 1 cup pumpkin puree • 1 onion, diced • 2 carrots, diced • 2 celery stalks, diced • 3 cloves garlic, minced • 1 can (28oz) crushed tomatoes • 1 cup beef broth • 2 tbsp tomato paste • 1 tsp pumpkin pie spice • 1 tsp dried oregano • ½ tsp cinnamon • 2 tbsp olive oil • Salt and pepper to taste • Fresh basil for garnish • Parmesan cheese for serving
Instructions
- Heat olive oil in large Dutch oven over medium heat
- Add ground beef and cook until browned
- Add onion, carrots, and celery, cook 5 minutes
- Add garlic and cook 1 minute until fragrant
- Stir in tomato paste and cook 2 minutes
- Add crushed tomatoes, beef broth, and pumpkin puree
- Add pumpkin pie spice, oregano, and cinnamon
- Season with salt and pepper
- Bring to boil, then reduce heat
- Simmer uncovered 45-60 minutes, stirring occasionally
- Adjust seasoning if needed
- Serve over pasta
- Garnish with fresh basil and Parmesan cheese
