Pumpkin Beef Bolognese: A Rich, Comforting Twist on a Classic Pasta Sauce

Ingredients

• 1 lb ground beef • 1 cup pumpkin puree • 1 onion, diced • 2 carrots, diced • 2 celery stalks, diced • 3 cloves garlic, minced • 1 can (28oz) crushed tomatoes • 1 cup beef broth • 2 tbsp tomato paste • 1 tsp pumpkin pie spice • 1 tsp dried oregano • ½ tsp cinnamon • 2 tbsp olive oil • Salt and pepper to taste • Fresh basil for garnish • Parmesan cheese for serving


Instructions

  1. Heat olive oil in large Dutch oven over medium heat
  2. Add ground beef and cook until browned
  3. Add onion, carrots, and celery, cook 5 minutes
  4. Add garlic and cook 1 minute until fragrant
  5. Stir in tomato paste and cook 2 minutes
  6. Add crushed tomatoes, beef broth, and pumpkin puree
  7. Add pumpkin pie spice, oregano, and cinnamon
  8. Season with salt and pepper
  9. Bring to boil, then reduce heat
  10. Simmer uncovered 45-60 minutes, stirring occasionally
  11. Adjust seasoning if needed
  12. Serve over pasta
  13. Garnish with fresh basil and Parmesan cheese
