Ingredients
• 2 sheets frozen puff pastry, thawed • 1 cup pumpkin puree • ½ cup cream cheese, softened • ¼ cup brown sugar • 1 egg • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp ginger • 2 tbsp maple syrup • 1 egg yolk for egg wash • 1 tbsp water for egg wash
Instructions
- Preheat oven to 400°F
- Roll out puff pastry sheets
- Cut into 2-inch squares
- Press squares into mini muffin tin cups
- Prick bottoms with fork
- Beat pumpkin puree, cream cheese, and brown sugar
- Add egg, spices, and maple syrup
- Mix until smooth and well combined
- Spoon filling into pastry shells
- Mix egg yolk with water for egg wash
- Brush edges of pastry with egg wash
- Bake 15-20 minutes until golden brown
- Cool completely before removing
- Serve at room temperature
