Pumpkin Rice Pudding: A Cozy, Creamy Fall Dessert

Ingredients

• 1 cup Arborio rice • 4 cups whole milk • 1 cup pumpkin puree • ¼ cup brown sugar • 2 tbsp maple syrup • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp salt • 2 tbsp butter • ¼ cup raisins (optional) • 2 tbsp chopped pecans for garnish


Instructions

  1. In heavy-bottomed saucepan, combine rice and milk
  2. Bring to boil over medium heat, stirring constantly
  3. Reduce heat to low and simmer 20-25 minutes
  4. Stir frequently to prevent sticking
  5. Add pumpkin puree, brown sugar, and maple syrup
  6. Add pumpkin pie spice, cinnamon, nutmeg, and salt
  7. Continue cooking 10-15 minutes until rice is tender
  8. Stir in butter and vanilla extract
  9. Add raisins if using
  10. Remove from heat and let cool slightly
  11. Serve warm in bowls
  12. Garnish with chopped pecans
