Ingredients
• 1 cup Arborio rice • 4 cups whole milk • 1 cup pumpkin puree • ¼ cup brown sugar • 2 tbsp maple syrup • 1 tsp vanilla extract • 1 tsp pumpkin pie spice • ½ tsp cinnamon • ¼ tsp nutmeg • ¼ tsp salt • 2 tbsp butter • ¼ cup raisins (optional) • 2 tbsp chopped pecans for garnish
Instructions
- In heavy-bottomed saucepan, combine rice and milk
- Bring to boil over medium heat, stirring constantly
- Reduce heat to low and simmer 20-25 minutes
- Stir frequently to prevent sticking
- Add pumpkin puree, brown sugar, and maple syrup
- Add pumpkin pie spice, cinnamon, nutmeg, and salt
- Continue cooking 10-15 minutes until rice is tender
- Stir in butter and vanilla extract
- Add raisins if using
- Remove from heat and let cool slightly
- Serve warm in bowls
- Garnish with chopped pecans
