Ingredients

For the base:
• 1 cup graham cracker crumbs (or gluten-free oats + nuts blend)
• 2 tbsp coconut oil or butter, melted
• 1 tbsp honey or maple syrup

For the radiant filling:
• 8 oz cream cheese, softened (or cashew cream for vegan)
• ½ cup pumpkin puree (unsweetened)
• ⅓ cup powdered sugar or erythritol
• 1 tsp vanilla extract
• ½ tsp pumpkin pie spice
• Zest of 1 orange (optional, for brightness)
• ½ cup whipped coconut cream or heavy cream (chilled)

For the glowing finish:
• Extra whipped cream
• Edible gold dust or luster spray (optional, for radiance!)
• Cinnamon sprinkle or crushed pecans
• Fresh pomegranate seeds or orange segments (for color & sparkle)


Instructions

  1. Make the base: Mix graham cracker crumbs, melted oil, and honey. Press firmly into the bottom of a 7-inch springform pan or serving dish. Chill 10 minutes.
  2. Make the filling: In a bowl, beat cream cheese until fluffy. Add pumpkin, powdered sugar, vanilla, pumpkin pie spice, and orange zest. Blend until smooth.
  3. Gently fold in whipped cream until light and airy.
  4. Spread over the crust. Smooth the top and chill at least 2 hours (or overnight).
  5. Before serving, add a cloud of whipped cream, a shimmer of edible gold, and a pop of red pomegranate seeds for a radiant effect.
