Juicy chicken wraps creamy mozzarella, sweet peppers, and tender spinach perfectly.
Ingredients
4 boneless, skinless chicken breasts
1 cup fresh spinach leaves
1/2 cup roasted red peppers, sliced
1 cup shredded or sliced mozzarella cheese
1 tsp garlic powder
1 tsp Italian seasoning
Salt and pepper to taste
1 tbsp olive oil or melted coconut oil
Toothpicks or kitchen twine (for securing)
Instructions
Preheat oven to 375°F (190°C).
Cut a pocket into the side of each chicken breast.
Season chicken with salt, pepper, garlic powder, and Italian seasoning.
Stuff each breast with spinach, roasted red peppers, and mozzarella.
Secure with toothpicks or twine.
Heat oil in a skillet and sear chicken for 2–3 minutes per side.
Transfer to a baking dish and bake for 20–25 minutes, until cooked through.
Let rest 5 minutes before serving.
