Juicy chicken filled with melty mozzarella, sweet peppers, and garlicky spinach!
Ingredients
4 boneless, skinless chicken breasts
1 cup fresh spinach, sautéed
½ cup roasted red peppers, sliced
1 cup shredded mozzarella cheese
2 cloves garlic, minced
1 tbsp olive oil
1 tsp Italian seasoning
Salt & pepper to taste
Toothpicks or kitchen twine
Instructions
Preheat oven to 375°F (190°C).
Slice a pocket into the side of each chicken breast.
In a pan, sauté garlic in olive oil, then add spinach and cook until wilted. Let cool slightly.
Stuff each chicken breast with spinach, roasted red peppers, and mozzarella. Secure with toothpicks.
Season outside of chicken with salt, pepper, and Italian seasoning.
Sear stuffed chicken in an oven-safe skillet over medium heat (2–3 min per side), then transfer to oven.
Bake for 20–25 minutes, or until chicken is fully cooked (165°F internal temp).
Let rest a few minutes before serving.
