Ingredients
• 1 lb (450g) ground pork sausage (hot or mild)
• 8 oz cream cheese, softened (or dairy-free alternative)
• 1 cup shredded cheddar cheese
• 1 can (10 oz) Rotel diced tomatoes & green chilies (drained well)
• 1 cup biscuit baking mix (like Bisquick) or almond flour (for low-carb)
• Optional: ½ tsp garlic powder, onion powder, or smoked paprika
Instructions
- In a large bowl, combine cooked sausage, cream cheese, cheddar, Rotel, and biscuit mix. Mix until fully blended.
→ Pro tip: Brown the sausage first in a skillet over medium heat, then drain excess fat before adding to the bowl. - Chill mixture for 15–20 minutes (makes rolling easier).
- Preheat oven to 350°F (175°C) if baking. Line a baking sheet with parchment paper.
- Roll into 1-inch balls and place on the tray (or serve chilled as “no-bake” bites).
- Bake 18–22 minutes, until golden and heated through.
- Serve warm with toothpicks—perfect alongside ranch, sour cream, or extra salsa!
🔥 Make it spicy: Add a dash of cayenne or use hot sausage and spicy Rotel!
💡 No-oven option: Skip baking and chill rolled balls for a firm, sliceable dip-style spread.
✨ Game day favorite, holiday appetizer, or quick snack—always a crowd pleaser!
