Ingredients
• 1 lb spaghetti or fettuccine • 1 lb large shrimp, peeled and deveined • 1 bunch asparagus, trimmed and cut into pieces • 6 slices bacon, diced • 4 eggs • 1 cup Parmesan cheese, grated • 3 cloves garlic, minced • 2 tbsp olive oil • 2 tbsp fresh parsley, chopped • Salt and black pepper to taste • ¼ tsp red pepper flakes (optional)
Instructions
- Cook pasta according to package directions
- Reserve 1 cup pasta water before draining
- Blanch asparagus in boiling water 2-3 minutes, drain
- Cook bacon in large skillet until crispy
- Remove bacon, leave drippings in pan
- Sauté shrimp in bacon drippings until pink
- Add garlic and cook 1 minute
- Add asparagus and cook 2 minutes
- Whisk eggs and Parmesan in bowl
- Add drained pasta to skillet
- Remove from heat and quickly stir in egg mixture
- Add pasta water gradually until creamy
- Toss in shrimp and asparagus
- Season with salt, pepper, and red pepper flakes
- Garnish with bacon, parsley, and extra Parmesan
