Shrimp Asparagus Carbonara: A Luxurious Twist on a Classic Pasta

Ingredients

• 1 lb spaghetti or fettuccine • 1 lb large shrimp, peeled and deveined • 1 bunch asparagus, trimmed and cut into pieces • 6 slices bacon, diced • 4 eggs • 1 cup Parmesan cheese, grated • 3 cloves garlic, minced • 2 tbsp olive oil • 2 tbsp fresh parsley, chopped • Salt and black pepper to taste • ¼ tsp red pepper flakes (optional)


Instructions

  1. Cook pasta according to package directions
  2. Reserve 1 cup pasta water before draining
  3. Blanch asparagus in boiling water 2-3 minutes, drain
  4. Cook bacon in large skillet until crispy
  5. Remove bacon, leave drippings in pan
  6. Sauté shrimp in bacon drippings until pink
  7. Add garlic and cook 1 minute
  8. Add asparagus and cook 2 minutes
  9. Whisk eggs and Parmesan in bowl
  10. Add drained pasta to skillet
  11. Remove from heat and quickly stir in egg mixture
  12. Add pasta water gradually until creamy
  13. Toss in shrimp and asparagus
  14. Season with salt, pepper, and red pepper flakes
  15. Garnish with bacon, parsley, and extra Parmesan
