Ingredients

1 lb shrimp, peeled and deveined

1 cup long grain white rice (uncooked)

2¼ cups chicken broth or stock

½ lb ground sausage (optional, for extra flavor)

1 bell pepper, diced

1 small onion, diced

2 cloves garlic, minced

1 tsp Cajun seasoning (more to taste)

½ tsp paprika

1 tbsp olive oil or butter

Salt & pepper to taste

Fresh parsley or green onions for garnish


Instructions

In a large skillet or pot, heat oil over medium heat. Add sausage (if using) and cook until browned.

Stir in onion, bell pepper, and garlic. Sauté until softened, about 3–4 minutes.

Add rice, Cajun seasoning, paprika, and stir well to coat the rice in spices.

Pour in chicken broth, bring to a boil, then reduce heat and cover. Simmer 15–18 minutes, until rice is almost cooked.

Add shrimp on top, cover, and cook another 5–7 minutes, or until shrimp is pink and rice is fluffy.

Fluff rice, adjust seasoning, and garnish with parsley or green onions.
