Silky Creamed Peas

  • 3 tablespoons all-purpose flour 🌾
  • 1/4 teaspoon garlic powder (optional) 🧄
  • 2 cups whole milk (or half-and-half) 🥛
  • 1 teaspoon salt 🧂
  • 1/2 teaspoon white or black pepper 🌶️
  • 4 cups frozen peas 🟢
  • 1/4 cup heavy cream (optional) 🥄
  • Chopped chives or dill for garnish 🌿
  • Extra butter for finishing (optional) 🧈

Instructions

  1. In a medium saucepan, melt the butter over medium heat until foaming.
  2. Add the flour and garlic powder (if using) and whisk constantly until smooth and lightly cooked, about 1–2 minutes to remove the raw flour taste.
  3. Slowly pour in the milk while whisking vigorously to prevent lumps, bringing the mixture to a gentle simmer.
  4. Continue to cook and whisk frequently until the sauce thickens and coats the back of a spoon, about 5–7 minutes. Season with salt and pepper.
  5. Add the frozen peas to the sauce and stir frequently until heated through and tender, about 3–4 minutes.
  6. If using, stir in the heavy cream for extra silkiness and taste; adjust salt and pepper as needed.
  7. Finish with a pat of extra butter if desired and sprinkle with chopped chives or dill.
  8. Serve warm as a comforting side dish or ladle into a bowl for a simple, cozy meal. Enjoy!
