Ingredients
For the Biscuits (Low Carb):
1 cup almond flour
¼ cup coconut flour
½ tsp baking powder
¼ tsp baking soda
½ tsp salt
2 tbsp melted butter or coconut oil
2–4 tbsp unsweetened almond milk or water (as needed)
1 large egg
For the Skinny Gravy:
4 oz lean ground turkey or plant-based crumbles
1 tbsp powdered erythritol or monk fruit sweetener
1 tbsp almond flour or oat fiber (for keto option)
1½ cups unsweetened almond milk or skim milk
1 tsp garlic powder
1 tsp nutritional yeast (optional, for cheesy flavor)
Salt and pepper to taste
Optional: 1 tbsp low-sodium soy sauce or Worcestershire for extra depth
Instructions
Make the Biscuits:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, mix almond flour, coconut flour, baking powder, baking soda, and salt.
Add egg and melted butter. Gradually mix in almond milk until a soft dough forms.
Scoop small portions of dough onto the baking sheet and shape into rounds.
Bake for 12–15 minutes until lightly golden and firm to touch.
Make the Gravy:
In a skillet over medium heat, cook turkey or crumbles until browned.
Sprinkle in almond flour or oat fiber and stir to coat. Cook for 1–2 minutes.
Gradually whisk in almond milk, garlic powder, nutritional yeast (if using), and seasonings.
Simmer for 3–4 minutes until thickened. Adjust seasoning with salt and pepper.
Assemble:
Split warm biscuits open and spoon gravy generously inside.
Serve hot for a comforting, lighter take on biscuits and gravy!
