Sweet pineapple, tangy barbecue sauce, and juicy meatballs simmered to perfection — easy, healthy, and bursting with flavor!


Ingredients

1 lb lean ground beef (or plant-based alternative)
½ cup rolled oats (gluten-free if needed)
¼ cup egg whites or 1 large egg
2 tbsp ketchup
1 tsp garlic powder
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
1 cup crushed pineapple (in juice, drained)
¾ cup low-sugar barbecue sauce


Instructions

In a bowl, mix beef, oats, egg, ketchup, garlic powder, paprika, salt, and pepper until well combined.
Roll mixture into 18–20 meatballs.
Place meatballs in slow cooker. Add crushed pineapple and barbecue sauce on top. Stir gently to coat.
Cover and cook on LOW for 4 hours or HIGH for 2 hours.
Serve warm over rice, cauliflower rice, or with toothpicks for a party snack!
