Spaghetti Squash Casserole: A Healthy, Cheesy Comfort Dish You’ll Crave

Ingredients

• 2 large spaghetti squash • 1 lb ground beef • 1 onion, diced • 3 cloves garlic, minced • 1 jar (24oz) marinara sauce • 1 cup mozzarella cheese, shredded • ½ cup Parmesan cheese, grated • 1 tsp Italian seasoning • ½ tsp red pepper flakes • 2 tbsp olive oil • 2 tbsp fresh basil, chopped • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F
  2. Cut spaghetti squash in half lengthwise
  3. Remove seeds and brush with olive oil
  4. Place face-down on baking sheet
  5. Roast 35-40 minutes until tender
  6. Scrape out spaghetti strands with fork
  7. Heat large skillet over medium heat
  8. Brown ground beef with onion and garlic
  9. Drain excess fat
  10. Add marinara sauce, Italian seasoning, and red pepper flakes
  11. Simmer 10 minutes
  12. Mix spaghetti squash with beef sauce
  13. Transfer to 9×13 inch baking dish
  14. Top with both cheeses
  15. Bake 20 minutes until bubbly
  16. Garnish with fresh basil
