• ½ cup mayonnaise or Greek yogurt
• 1 cup shredded pepper jack or cheddar cheese
• 1 lb (450g) cooked shrimp, finely chopped
• 2 cloves garlic, minced
• 2 tbsp green onions, sliced
• 1 tsp Cajun seasoning (plus more to taste)
• ½ tsp smoked paprika
• ¼ tsp cayenne pepper (optional, for heat)
• 1 tbsp lemon juice
• Salt & black pepper to taste
• Optional: ½ cup roasted red peppers, diced
Instructions
- In a large bowl, beat cream cheese until smooth.
- Mix in mayonnaise, shredded cheese, chopped shrimp, garlic, green onions, Cajun seasoning, smoked paprika, cayenne (if using), lemon juice, salt, and pepper. Fold in roasted peppers if using.
- Taste and adjust: add more Cajun spice, lemon, or a pinch of sugar to balance.
- Transfer to a serving dish. Cover and chill at least 1 hour to let flavors meld.
- Serve cold or slightly warmed (bake at 350°F for 15–20 mins if desired).
- Serve with:
