Ingredients

• 8 oz cream cheese, softened (or dairy-free alternative)
• ½ cup mayonnaise or Greek yogurt
• 1 cup shredded pepper jack or cheddar cheese
• 1 lb (450g) cooked shrimp, finely chopped
• 2 cloves garlic, minced
• 2 tbsp green onions, sliced
• 1 tsp Cajun seasoning (plus more to taste)
• ½ tsp smoked paprika
• ¼ tsp cayenne pepper (optional, for heat)
• 1 tbsp lemon juice
• Salt & black pepper to taste
• Optional: ½ cup roasted red peppers, diced


Instructions

  1. In a large bowl, beat cream cheese until smooth.
  2. Mix in mayonnaise, shredded cheese, chopped shrimp, garlic, green onions, Cajun seasoning, smoked paprika, cayenne (if using), lemon juice, salt, and pepper. Fold in roasted peppers if using.
  3. Taste and adjust: add more Cajun spice, lemon, or a pinch of sugar to balance.
  4. Transfer to a serving dish. Cover and chill at least 1 hour to let flavors meld.
  5. Serve cold or slightly warmed (bake at 350°F for 15–20 mins if desired).
  6. Serve with:
    → Tortilla chips, baguette slices, or crackers
    → Veggie sticks (celery, bell peppers, cucumbers)
    → Oyster crackers or pita chips
